A favorite of many, this deliciously sweet honey is heady of Citrus perfume. Anyone who has ever had the experience of driving through a Citrus Grove in bloom will be instantly transported to that memory upon tasting. In Florida, Valencia Oranges are the variety that bloom late January (really!) and are (were) dense in numbers providing adequate Forage for a large volume of Honey Bees. This was true until the last decade, when the trees became sick from 2 types of diseases, that have decimated the Groves to a minimal fraction of what they were. Conventional Farming struggles to reestablish these groves and it will take a very long time for them to recover. This honey is increasing more rare from this region. Light in color, and aroma, it plays really well in beverages, tea in particular. Pair with light spirits, like Gin and Vodka to enjoy the unique floral notes.
